When Buckingham Palace announced news about the coronation quiche, some people were surprised that it’s a French-inspired dish, rather than a British classic, and that it includes broad beans, which are not in season in May, and tarragon, which is not a particularly common herb. But the royal couple are following in the footsteps of Queen Elizabeth in 1953, who also chose an unusual dish for her coronation. Coronation Chicken, which was little-known then but is now very much a British staple, was said to have been inspired by Jubilee Chicken, a dish prepared for the silver jubilee of George V in 1935.

The coronation quiche was ‘personally chosen’ by King Charles and Queen Camilla, with the help of Royal Chef, Mark Flanagan, to mark the occasion. It’s a relatively simple recipe to follow and not too costly to make, described on the Royal family’s website as ‘a deep quiche with a crisp, light pastry case and delicate flavours of spinach, broad beans and fresh tarragon. Eat hot or cold with green salad and boiled new potatoes – perfect for a Coronation Big Lunch!’
How to Join in with the Coronation Celebrations
The recipe was published as part of the Coronation Big Lunch initiative, which Camilla has been patron of since 2013, to inspire everyone to join in with street parties up and down the country, and to encourage neighbours to get together in their communities to ‘share friendship, food and fun’ while celebrating on May 6th.
