We are excited to have obtained a one-off batch of Goodwood Estate organic spring lamb for this recipe and, when it’s gone, it’s gone!
This high-protein pie is made using hand cut chunks of succulent local spring lamb, rather than the more usual, cheaper, minced meat. Garden vegetables have been added to balance the richness of the minty, natural stock gravy; local craft Cheriton Porter Ale, a dash of Balsamic vinegar and some freshly-cut mint make a truly exceptional contrast to the crisp, butter-rich pastry.

Having received a generous sample from Goodwood, I've had the pleasure of perfecting this recipe with various dishes at home—from Irish Stew to Lamb Madras and Shepherd's Pie. My daughter even jokes that we're turning into lambs with all the delicious trials! This creation is not merely a meal; it's a medley of my food adventures and a testament to the versatility and outstanding quality of lamb.”
